When shopping, select meat last to ensure that veal stays as cold as possible.

Choose veal that is creamy pink in color and has a fine-grained texture. Any
fat covering should be milky white. A rose-red color is typical of
vacuum-packaged veal; when opened and exposed to oxygen, the veal will turn
creamy pink.

Choose packages that are cold, tightly wrapped and without tears or punctures.
Be sure that packages do not contain excessive purge or juice -- an indication
of temperature abuse, excessive storage or lack of full vacuum.

Purchase on or before the "sell by" date printed on the package label.

For holidays and special occasions, order the type and size of roast you need
in advance from your meat retailer. Plan on about 6 ounces cooked, trimmed veal
for holiday servings.
