  • When shopping, select meat last to ensure that veal stays as cold as possible.
  • Choose veal that is creamy pink in color and has a fine-grained texture. Any fat covering should be milky white. A rose-red color is typical of vacuum-packaged veal; when opened and exposed to oxygen, the veal will turn creamy pink.
  • Choose packages that are cold, tightly wrapped and without tears or punctures. Be sure that packages do not contain excessive purge or juice -- an indication of temperature abuse, excessive storage or lack of full vacuum.
  • Purchase on or before the "sell by" date printed on the package label.
  • For holidays and special occasions, order the type and size of roast you need in advance from your meat retailer. Plan on about 6 ounces cooked, trimmed veal for holiday servings.
